Lemon & Herb Chicken Kebabs

750g chicken thigh chopped bite size pieces
8 pre soaked bamboo skewers
1 large red capsicum cut into bite size
1 red onion cut into bite size

2 garlic cloves finely chopped
2 tbsp lemon rind finely grated
1/4 cup lemon juice
1 tbs fresh oregano leaves
2 tsp sweet paprika
1 & 1/2 tbsp olive oil

Sausage Rolls

500g extra lean mince
Salt and pepper
1 teaspoon mixed herbs
1 teaspoon garlic
1 peeled and shredded carrot
4 rye mountain wraps
1/2 cup almond meal
2 eggs
1 egg beaten (to baste the top of the pastry with)
Moroccan spice or sesame seeds (can do both)

Honey Lemon Chicken

1 whole chicken
2 tbsp olive oil
2 tbsp honey
1 tbsp sea salt
3 lemons
2 medium onions
1 head garlic

Naturally Sweet Mango Sorbet

1 ½ cups frozen mango chunks
1 large ripe banana
1- 2 tablespoon lemon or lime juice
lemon or lime zest

Place the mango, banana, and 1 tablespoon of the lemon or lime juice in a food processor or high-speed blender (like a Vitamix) and process until smooth. Adjust the flavour with more lemon or lime juice and zest to taste.
