$2 a day of food isn't as easy as it sounds when you are needing gluten free & reasonably healthy but we did it, although we had to take short cuts where we could like UHT milk which I don't particularly like.

ROCKET PESTO
1 large bunch rocket (approx. 120g)
1 cup toasted almonds (approx. 190g)
½ cup oil of choice
1 clove garlic
good pinch salt

2/3 cup sesame seeds – toasted (90g)
1/2 cup chia seeds (80g)
1/4 cup maple syrup (55g)

400g water
1 tspn coconut sugar
