Cran-Apple Coleslaw (AIP)

Ingredients:
1 lb red cabbage, cored
2 tbs extra-virgin olive oil
1 1/2 tsp coconut water vinegar or white wine vinegar
1/4 tsp salt
1 apple, peeled, cored and diced
1/2 c fresh cranberries (or thawed frozen)

Skip the cranberries or use dried if you can't get fresh. This works well with Napa cabbage too.
