Having hand made sushi rolls in #Tsukiji fish market with the fresh tuna that we saw being cut up. The frozen tuna auction got underway at #Tsukiji fish market, was incredible seeing the size of the tuna and the speed at which they were sold. The largest one that was sold was 290kg which was a beast. Once in a life time experience and worth the 4am wake up.....

Some of the evening specials going out at the The Fat Pig by Tom Aikens juicy moist pork skewers marinated in a barbecue rub then sauce with around 18 different spices & seasonings, then grilled to perfection. The Iberian pork rack with a light rub & brine, served with a classic pomme Boulanger....

The herb brined chicken being plated up, served with lobster jus grilled asparagus & endive. The endive was pickled in reduced orange juice, Rosemary, black pepper, olive oil & thyme, cooked sous vide at a high temp, then we use this liquor after to make a savory custard for the foam....
