My mother woke up in heaven today. She has lived there for 12 years now. And I wonder what she is doing. You see, today is her birthday and I can't help wondering what it's like for her. And then the memories came flooding in.

Although my heart is breaking and I can hardly breathe right now, I feel I owe it to all of you to know that Cooper died last night. He wasn't ill. He played yesterday as he usually did. He ate his dinner and took his last walk around the yard and seemed to be okay. But this morning when I tried to wake him up, he just laid there curled up asleep.

There are so many ways you can use leftover corned beef and this is one of my favorites. I love this for breakfast, brunch or dinner! It is hearty and delicious and what I call comfort food!

Weather UPDATE: One to two inches of snow. Not the 16"-18 inches they predicted even in the wee hours of the morning. Right now it is as bright and sunny as a summer day. Snow has started to melt and I have an over abundance of toilet paper.

I promised a weather update after the post I put up the other day.

Weather UPDATE:

They have now named the snow storm Stella. Do you see that number at the top right center of the screen? That's my front yard. I have watched that number go from 22 inches down to 8 inches and now back up to 16. In other words: It's anyone's guess.

With St. Paddy's day rapidly approaching, I wanted to come up with something special for my friends and family. These are so good. I love a chewy cookie or brownie and the center of these are super soft and chewy.
